First wash, peel, and thinly slice the white potatoes.

Next prepare the onion and garlic.  Slice the onion into thin slices and mince the garlic cloves.

Shred the cheese...

Then prepare your fresh cheeses - Shred the gruyere, cheddar, and parmesan cheese.

Line the potatoes slices up in three rows down the center of a large baking dish.  Place the onion slices in between the potato slices, making sure they are evenly dispersed.  Spread the minced garlic on top and add salt & pepper.

Assemble the potatoes...

First melt the butter and flour together in a pan over medium heat.  Add the warm milk to the flour & butter in an even stream.  Whisk constantly. Once the sauce has thickened, add in the shredded cheese. Whisk until the cheese melts. Add salt & pepper.

Make the cheese sauce...

Then pour the cheese sauce on top of the potatoes and spread evenly.  Top with the remaining of each of the cheeses.  Bake & enjoy!
