Buffalo Chicken Stuffed Peppers are going to be your new favorite easy dinner recipe! These green bell peppers are stuffed with shredded rotisserie chicken, greek yogurt, cream cheese, and Frank’s Red Hot Buffalo Sauce. They’re low carb, cheesy, creamy, and have the perfect amount of heat!

Chop the bell peppers vertically in half. Remove the seeds.
Add the rotisserie chicken, greek yogurt, cream cheese, buffalo sauce, garlic powder, salt, and pepper to a large mixing bowl. Combine evenly.
Bake the peppers by themselves for a few minutes. Remove from the oven and stuff with the buffalo chicken mixture.
Add cheddar cheese on top of the stuffed peppers and bake. Top with more hot sauce, blue cheese or ranch dressing, and green onions. Enjoy!
