Prepare the couscous according to the package directions. Set aside and allow to cool.
Prepare all the vegetables. Slice the cucumber, halve the grape tomatoes, and dice the red onion.
Add the cooked couscous, chickpeas, vegetables, feta cheese, lemon juice, and olive oil to a large mixing bowl. Stir to combine.
