This recipe has a tropical twist that will transport you to a beach. With a pina colada in hand! It’s creamy, chewy, and made with tons of yummy fruits. Pineapple, banana, and coconut are a perfect flavor combination that makes this an easy breakfast masterpiece.

I am not a dietitian or nutritionist, but in my opinion oatmeal is always a healthy breakfast option!

This specific tropical baked oatmeal is made with loads of healthy ingredients. There are healthy fats from the coconut milk & shredded coconut, natural sweetness from the fruit, and complex carbs from the oats. It’s a great source of whole grains, vitamins, minerals, and fiber too!

Ingredients needed for Pineapple Coconut Baked Oatmeal…

Pineapple Coconut Baked Oatmeal is made with all wholesome and simple ingredients. Tons of fresh tropical fruit, old fashioned oats, and unsweetened nondairy milk will make this one of your favorite healthy recipes!

  • Banana: 1 mashed banana is a delicious natural sweetener in this oatmeal bake.
  • Coconut Milk: Coconut milk adds coconut flavor and perfect creaminess to this recipe. 1 13.5 oz can is all you need!
  • Almond Milk: To add some extra moisture, you’ll also need almond milk or the milk of your choice. Add 1/2 cup!
  • Honey: 1/4 cup honey adds a delicious, refined sugar free, and natural sweetness here.
  • Pineapple: Fresh pineapple adds incredible flavor and a pop of sweetness to this recipe. 1 cup is the perfect amount.
  • Oats: This recipe calls for 2 cups old fashioned oats! Quick or rolled should also work.
  • Unsweetened Shredded Coconut: Shredded coconut adds an extra oomph of coconut flavor. 1 cup is just the right amount.
  • Vanilla Extract: Add 1 tsp vanilla extract for that classic flavor.
  • Baking Powder: 2 tsp of baking powder helps to bake this oatmeal to perfection!
  • Salt: Lastly, add a little bit of salt. 1/4 tsp to be exact!

Ingredient swaps…

There are a few basic ingredient swaps you can make to this easy recipe. Be sure to not change too many though, because then I can’t guarantee the final product will be the same.

Banana: You could replace the mashed banana in this baked oatmeal with unsweetened applesauce. This will most likely make things less sweet though, so add more honey if you’d like!

Shredded Coconut: Shredded coconut could be swapped out for coconut flakes. Or more oats, if you do not have either.

Almond Milk: You can use any milk you’d like in place of the almond milk here. Whatever is your favorite or you have on hand!

Honey: You could replace honey with any liquid sweetener of your choice. Pure maple syrup or agave should both work.

How to make Tropical Baked Oatmeal…

I love baked oatmeal recipes because they are one of the easiest breakfast options out there! All you have to do is combine the ingredients and bake. It’s that simple, and the result is oh-so-good!

Step 1: The first thing to do is set the oven to 350 degrees.

Step 2: Next to a large bowl add the mashed banana, coconut milk, almond milk, honey, and vanilla extract.  Combine until smooth. Next combine oats, shredded coconut, baking powder, and salt with the wet ingredients.  Mix thoroughly. Stir in the chopped pineapple.

Step 3: Transfer the oatmeal mixture from the large mixing bowl to a prepared baking dish and spread evenly.  Place in a preheated oven and bake for 25-35  minutes depending on the depth of your dish.

Step 4: Top with an extra sprinkle of coconut, chopped pineapple, and enjoy.

This baked oatmeal recipe is so simple to meal prep and make ahead of time! Simply prepare as instructed on Sunday night or at the beginning of the week and store in the fridge.

Then you’ll have a healthy and delicious breakfast ready to go for the whole week! All you have to do on a busy morning is pop a piece in the microwave. It’s perfect!

Can I use canned pineapple for Pineapple Coconut Baked Oatmeal?

Yes, you can use canned pineapple. Be sure to drain and rinse the pineapple and then chop as you would the fresh fruit. If needed!

Should I grease the baking dish?

Yes, you should definitely grease the baking dish!

Adding some cooking spray or melted butter to the bottom of the dish should do the trick. It makes for such an easy cleanup!

What size baking dish should I use?

Any large baking dish can be used here. However, using a larger & shallow dish versus a smaller & deeper dish will affect the baking time needed.

Simply bake until the oatmeal is solid to the touch, it will be okay if the inside is a little mushy. It is still oatmeal after all!

How do I best serve Pineapple Coconut Baked Oatmeal?

I love to serve this baked oatmeal warm with some vanilla yogurt, extra pineapple, and a drizzle of honey on top. It is so delicious!

But you could serve with pretty much any fresh fruit or traditional oatmeal toppings you enjoy.
