Peanut Butter & Jelly Cookie Sandwiches

If you guys know me at all, you know that I live and breathe for the peanut butter and jelly flavor combo. And more specifically for peanut butter and jelly sandwiches! So these Peanut Butter & Jelly Cookie Sandwiches are pretty much my dream come true. They are just about the cutest little cookie I have ever seen and are super easy too! Think perfectly soft & chewy peanut butter white chocolate chip cookies filled with the jelly or jam of your choice. Are you drooling as much as I am yet?

What you need for these Peanut Butter & Jelly Cookie Sandwiches!

Not only are these cookie sandwiches absolutely delicious, they are actually made with all healthy, wholesome ingredients. They are gluten free, grain free, and refined sugar free depending on the chocolate chips you use. They could even be dairy free if you omit the chocolate chips or swap the white chocolate for a dairy free regular chocolate.

  • Peanut Butter: First up is peanut butter of course! Use a runny natural peanut butter in this recipe to get the best results. Look for a peanut butter that is simply peanuts and salt!
  • Pure Maple Syrup: Pure maple syrup is my tried & true refined sugar free sweetener of choice. It is absolutely delicious and works perfectly in this recipe! I believe you could swap this with a different liquid sweetener such as honey or agave, but I have not tested.
  • Almond Flour: Almond flour is my absolute favorite gluten free flour to bake with! It makes for the perfect texture in treats and is just ground up almonds.
  • Coconut Flour: I have to say I am new to baking with coconut flour and it has been a little tricky for me to figure out, but it worked so well in this cookie recipe! However, coconut flour is very different from most flours so it is difficult to find a replacement for.
  • White Chocolate Chips: I absolutely love white chocolate chips and think they go wonderfully with the peanut butter and jelly flavors in these cookie sandwiches, but you could totally swap with regular chocolate chips if you would like!
  • Jelly: Feel free to use the jelly or jam of your choice here! I used two different ones, and the thicker one held up as a filling much better.
  • Egg: To hold everything together and for some moisture!
  • Lastly Vanilla Extract & Salt for all things flavor and Baking Powder for a little rise.

How to make these Peanut Butter & Jelly Cookie Sandwiches!

  1. Set the oven to 350 degrees.
  2. In a mixing bowl combine the peanut butter, maple syrup, egg, and vanilla extract.
  3. In a separate bowl combine the almond flour, coconut flour, baking powder, and salt.
  4. Add the dry ingredients to the wet and combine.
  5. Stir in the white chocolate chips.
  6. Chill the dough in the fridge for about 10 minutes.
  7. Remove from the fridge and roll into about teaspoon sized balls. I got 19 small cookies (10 sandwiches, with one cookie leftover!) Place them on a greased or lined baking tray and flatten.
  8. Bake for 10 minutes.
  9. Remove from the oven and let cool.
  10. Top one cookie with a small spoonful of jelly or jam, then top with another cookie.
  11. Enjoy!
  12. Store in an airtight container on the counter for a day or two and then move to the fridge to keep them the freshest!

Ingredients

  • 1/2 cup peanut butter (runny natural kind!)
  • 1/4 cup pure maple syrup
  • 1 egg

  • 3 tbsp coconut flour
  • 1/4 cup white chocolate chips
  • 1/3 cup jelly or jam of choice (approximately! i didn’t measure)
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/8 tsp salt
