One of my favorite holiday traditions whether it be Christmas, Easter, or even Mother’s Day is a family brunch. Nothing beats a cozy morning of delicious food, people I love, and if I’m lucky … gifts! And me being me, I of course focus on the food part. My favorite dish on the table at these brunches is always that star-of-the-show sweet dish … you know the cinnamon rolls, monkey bread, or in my case Cinnamon Baked French Toast Casserole.

Cinnamon Baked French Toast Casserole is made with rich & buttery brioche bread, lots of warm cinnamon, and a sweet cream cheese frosting on top! This delicious casserole is easy, oven baked, and great for a crowd. It’s a holiday breakfast the whole family will love!

Ingredients needed for Cinnamon Bread French Toast Bake…

Cinnamon Baked French Toast Casserole only calls for a few delicious ingredients! You get the flavor of freshly baked cinnamon rolls with a lot less effort & ingredients, which I love.

  • Brioche Loaf: Brioche really takes this french toast baked casserole to a whole new level. The bread is rich, buttery, and delicious! You will need 1 loaf.
  • Eggs: This french toast casserole calls for 8 whole eggs.
  • Almond Milk: I always use unsweetened vanilla almond milk, but you can truly use any milk you like. Add 1 cup.
  • Pure Maple Syrup: Pure maple syrup gives an absolutely delicious flavor and sweetness to this recipe! You will need 1/4 cup + 2 tbsp in the casserole and 1 1/2 tbsp in the frosting.
  • Cream Cheese: Cream cheese is of course needed for the cream cheese frosting! 4 oz is the perfect amount.
  • Butter: You will also need 3 tbsp of salted butter for the frosting.
  • Cinnamon: This Cinnamon French Toast Bake calls for lots and lots of cinnamon! You will need 2 1/2 tsp and an extra sprinkle here and there!
  • Vanilla Extract: Vanilla extract is used in both the casserole itself and the cream cheese frosting! Together you will need 2 1/2 tsp.
  • Salt: 1/8 tsp of salt is needed to bring out all the flavors and elevate them in this recipe.

How to make Cinnamon Baked French Toast Casserole from scratch…

This recipe is incredibly easy to make! You pretty much dump the ingredients in a large baking dish and bake to fluffy, golden perfection. It’s the perfect no-stress dish for holiday brunch!

  1. Set the oven to 375 degrees.
  2. Cut the brioche loaf into 1/2 inch cubes and place into a greased large baking dish.
  3. In a large mixing bowl combine the eggs, almond milk, maple syrup, cinnamon, vanilla extract, and salt.
  4. Pour the egg mixture over the cubed bread.  Mix everything with your hands or a spoon and make sure every cube of bread is coated.
  5. Flatten and spread the bread evenly.  Sprinkle with some extra cinnamon.
  6. Bake for 30 minutes.
  7. Remove the french toast from the oven and let cool slightly.  Then spread the cream cheese frosting on top.  Add an extra sprinkle of cinnamon.
  8. Serve fresh & enjoy!

Homemade Cream Cheese Frosting is creamy, tangy, sweet, and delicious! It’s also super simple to make, here’s how to do it:

  1. Start by placing the cream cheese and butter in a bowl. Heat in the microwave for about 20 seconds to soften or remove from the fridge early enough for it to soften at room temperature.
  2. Combine the cream cheese and butter. Then mix in the pure maple syrup and vanilla extract until smooth.

That’s it! Then spread on this Easy French Toast Bake. Or enjoy by the spoonful lol!

What type of bread is best for this Easy French Toast Bake?

I have only tested this french toast bake recipe with a fresh brioche loaf, so that is the type of bread I recommend using. Brioche is a rich & buttery bread that just makes for an absolutely delicious french toast.

Sourdough, french bread, and challah are great options too!

How do you keep cinnamon from clumping in this Holiday Brunch Recipe?

If your cinnamon is clumping in your egg mixture it is okay. Do not worry! My cinnamon clumped, but was still distributed deliciously throughout the dish.

You can whisk the egg mixture to try and break out the clumps, but when you pour the mixture over the bread cubes and mix around, the cinnamon will be spread.

Follow the tips below for a perfect Cinnamon French Toast Bake each & every time!

  • Bake right away! I like to pop this casserole right in the oven as soon as I mix the bread cubes and egg mixture together. I think baking right away makes the end result less soggy!
  • Use a large baking dish! If you want more golden crispy top pieces (my favorite part), use a large and shallow baking dish. This will spread the french toast out, allowing more pieces to be on the top!
  • Lots of cinnamon! This one is pretty self explanatory, but add cinnamon to your heart’s delight. It provides a ton of flavor here and in my opinion more is always better.
  • Enjoy straight out of the oven! This Baked French Toast Casserole is most delicious when served fresh and does not hold up too well leftover, therefore I recommend enjoying right away.

Storing & Serving French Toast Bake with Cream Cheese…

I highly recommend serving this Cinnamon Baked French Toast Casserole right out of the oven! It is simply most delicious when served right away.

However, it can be stored in the refrigerator in an airtight container for about a week. I will warn you though, it is not the best to heat up. You can re-heat in the microwave, however the french toast could become more soggy than you would like. That’s why I recommend enjoying the day it is made!
