Chocolate Peppermint Almond Butter

I may be a little late with this recipe considering that Christmas has come and gone and peppermint is such a holiday flavor buuuut this Chocolate Peppermint Almond Butter is still just as delicious so I simply had to share! I mean who says the chocolate peppermint flavor combo can’t be enjoyed all year long?

I have made homemade nut butter before and have loved it each and every time. Homemade nut butter is great because it is much cheaper than store bought jars, you know exactly what is in it, and you can completely customize the flavors! This newest flavor creation has to be one of my favorites that I have made so far. It honestly tastes like dessert, almost like your taking a bite out of a thin mint!

What you need to make the almond butter!

  • almonds
  • cocoa powder
  • vanilla extract
  • peppermint extract
  • maple syrup
  • coconut oil

You will also need a food processor or high speed blender to make this almond butter. I have never actually made nut butter in a high speed blender, but I have seen other people do it and i’m pretty sure it should work. However, I always use a food processor and recommend one for the best results!

How to make the almond butter!

  1. Set oven to 350 degrees.
  2. Spread almonds out on a baking tray.
  3. Roast almonds for 5 minutes. Take out and stir. Roast for 3 minutes. Take out and stir. Roast for 3 minutes.
  4. Put almonds into the food processor. Turn the processor on high until a nut butter consistency forms. It may seem like this will never happen, but trust me it will!
  5. Add in the cocoa powder, coconut oil, peppermint extract, vanilla extract, and maple syrup.
  6. Turn the food processor on high once again until everything is combined.

This Chocolate Peppermint Almond Butter tastes like dessert, but is only made with a few good-for-you ingredients!  Perfect on toast, in your morning oats, or with an apple.

Ingredients

Scale
  • 2 cups almonds
  • 3/41 tsp peppermint extract
  • 1/2 tsp vanilla
  • 3 tbsp cocoa powder
  • 1 tbsp coconut oil
  • 3/4 tbsp maple syrup

Instructions

  1. Set oven to 350 degrees.

  4. Put almonds into the food processor. Turn the processor on high until a nut butter consistency forms. It may seem like this will never happen, but trust me it will!
  5. Add in the cocoa powder, coconut oil, peppermint extract, vanilla extract, and maple syrup.
  6. Turn the food processor on high once again until everything is combined.

Notes

Since this almond butter has coconut oil in it, it may slightly harden overtime.  It will return to its regular consistency if you pop it in the microwave for a few seconds or even spread on some warm toast!
