Simple Salmon Dinner

If you love easy weeknight meals that taste like they are straight out of a fancy restaurant kitchen, you have come to the right spot.

Parsley Parmesan Salmon is incredibly impressive and delicious, but comes together in under 30 minutes and with only 6 main ingredients. I mean what is better than that!

This flakey salmon is savory, butter, herby, cheesy, and downright delicious. I mean the parmesan crust topping is so delicious I pretty much want to cover anything and everything in it. And I just might!

This quick and easy meal is my go-to recipe to get a fresh, flavorful, and healthy dinner on the table in no time at all on busy weeknights. I highly recommend you try it out!

Ingredients

This simple salmon dish calls for only 6 ingredients, but still packs a delicious punch of flavor! It is a perfect, no hassle, and easy recipe perfect for a busy weeknight.

  • Salmon: You will need 2 skinless salmon fillets for this easy recipe!
  • Butter: Salted butter gives this salmon a delicious flavor and a crunchy crust. Add 3 tbsp!
  • Panko Breadcrumbs: The base of this salmon crust is Panko breadcrumbs! This is my favorite breadcrumb to get that crispy, crunchy, golden look we all know and love! 1/3 cup is the perfect amount.
  • Parmesan Cheese: 1/3 cup of grated parmesan cheese adds incredible flavor to the salmon here!
  • Garlic Powder: Add 1 tsp of garlic powder, because garlic is always a must!
  • Fresh Parsley: Fresh parsley is the herb in this herb-crusted salmon! It adds a fresh and delicious flavor that you simply can’t get with dried herbs. Add 2 1/2 tbsp finely chopped parsley.
  • Salt & Pepper: Add as much salt and black pepper to the dish as you’d like. I recommend a lot for ultimate deliciousness!

Substitutions & Additions

This crusted garlic parmesan salmon is quite simple and made with only a handful of ingredients, so there aren’t too many changes that can be made.

But I do have a few ideas for substitutions and additions you could make to meet your personal preferences, tastes, or needs!

Salmon: Although this is one of my favorite salmon recipes and the key element is of course the fish itself, I think you could swap in a different protein with the same crust. Perhaps a different fish or chicken breasts!

Butter: I like the rich taste butter provides here, but you could replace it with olive oil if you’d like.

Fresh Herbs: The star herb here is fresh parsley! However, you could definitely experiment with some different ones. Perhaps basil or oregano.

Garlic: This recipe calls for garlic powder for ease and simplicity. Fresh garlic would make for an even more delicious dish!

How To Make This Easy Salmon Recipe

Herb-Crusted Salmon is oven baked to a perfect crispness and golden brown color in no time at all! You can have a full dinner on the table in under 30 minutes.

Step 1: Set the oven to 425 degrees.

Step 2: In a mixing bowl add the Panko breadcrumbs, parmesan cheese, fresh parsley, garlic powder, salt, and pepper.  Combine evenly. A wide and shallow bowl works best!

Step 3: Melt the butter in a small bowl. Thoroughly coat the salmon fillets in the melted butter.  Next place the fillets in the bread crumbs and parmesan mixture.  Coat all sides and the top of the salmon thoroughly with the crust mixture.

Step4: Transfer the crusted salmon fillets to a large baking sheet.  Drizzle with any remaining butter.

Step 5: Place in the hot oven and bake for 15 minutes.  Then broil for 2-3 minutes to crisp up the salmon.

Step 6: Add fresh lemon juice or lemon zest on top and enjoy!

Expert Tips

Follow the tips below for the perfect parmesan salmon recipe each and every time!

Make sure to remove the skin from your salmon fillets.

Use freshly grated parmesan cheese in the breadcrumb and herb mixture. It will provide a better flavor!

Add lots of salt and pepper to the crust Panko mixture – depending on your personal tastes of course!

Thoroughly coat the salmon with both butter and the crispy topping – really pack it on and press it in!

Line the baking tray with a piece of parchment paper. This makes for much less mess and cleanup.

Broil the salmon at the end to crisp up beautifully – make sure to keep an eye so it doesn’t burn!

Add a little squeeze of lemon or lemon wedges on top when serving.

Use a meat thermometer to check the internal temperature of the salmon to make sure it is cooked to your liking. You should aim to reach about 130-135 degrees f.

Frequently Asked Questions

What salmon should I use in this recipe?

There are many types of salmon you may be able to find in your grocery store! Both different cuts and different species.

Any type of fillet cut should work here. Just always make sure you are buying fresh salmon! The fish should not be smelly and it should be bright in color without any discoloration.

Can I leave the skin on the salmon?

Yes, you can leave the skin on the salmon! I personally do not enjoy eating the salmon skin, but I know tons of people do. If that is you, go ahead and keep it on!

You’ll follow all the same instructions and place the salmon skin side down on the baking sheet.

How do I know the salmon is cooked through?

The allotted time, 15 minutes, should be enough to ensure that the salmon is cooked through.

However depending on the thickness of the fillet it may take a couple minute less or more. The easiest way to be extra sure is to use a meat thermometer and ensure the internal temperature reaches 130-135 degrees Fahrenheit.

You could also check out this post on the temperatures for rare, medium, and well done baked salmon!

How to best serve this parsley parmesan salmon?

In my opinion, the best way to serve this main dish salmon is with vegetable side dishes and a carb of choice, like truffle mashed potatoes, garlic parmesan roasted potatoes or simple lemon pasta! It creates a well rounded, healthy, and satisfying meal.

For the vegetables I love to do roasted broccoli, green beans, a side salad, or carrots.

But you could enjoy this salmon in many other ways! Like perhaps in a wrap for lunch or on top of fresh salad for dinner the next day.

How to store and re-heat this recipe?

You can store this panko crusted salmon in an airtight container in the refrigerator for 2-3 days.

My preferred method of re-heating is to place back in the oven or stovetop, to keep the crisp. But you could also pop in the microwave for about 60 seconds.

Whichever you prefer or have time to do!

  1. Thank you so much for posting this recipe! I first saw it in Instagram reels about 4 months ago and have made it for dinner weekly since then. It’s SO good, rivals most restaurant salmon, and comes out perfect each time!

Delicious and super easy. My minor alteration is I used a cast iron pan preheated w a tiny amount of avocado oil to about 275-300 before placing the salmon in the pan to ensure the bottom crust was crispy. Also the broiling time was more like 90 seconds. I used one large crushed garlic clove placed in the butter during melting. I used wild Norwegian salmon which was a very nice splurge. This will be in regular rotation. Thanks.
