This recipe is basically a combination of all things I love right now. First off, I have been having such a moment with white chocolate. Like it is so underrated!!! So I knew that it was time I made a recipe that it shined through in. I am also so into cookies lately. I think they have become my favorite dessert to make … and that is a big deal because I freaking love to make dessert. Like I actually have so many cookie recipe ideas in my head and I’m forcing myself to not make all of them right away! And lastly blueberries are totally my favorite fruit at the moment and I love all things oatmeal. So I combined all these yummy elements into one recipe and these White Chocolate & Blueberry Oatmeal Cookie Bars were born.

What you need for these White Chocolate & Blueberry Oatmeal Cookie Bars!

  • cashew butter
  • egg
  • applesauce
  • oats
  • coconut sugar
  • vanilla extract
  • white chocolate chips
  • blueberries
  • baking powder
  • salt

Did I mention these oatmeal cookie bars are healthy!?! I love love love to make a healthy dessert that tastes super indulgent … and let me tell you these are just that! The base of these bars is cashew butter. I absolutely love to use various nut butters as the base of my healthy cookies! I think the flavor that the cashew butter gives these cookies is amazing, but you could also use almond butter if you prefer. You could use peanut butter as well, but then your cookie bars will taste strongly like peanuts! This doesn’t happen with cashew or almond butter because they have much more neutral flavors.

These cookie bars are sweetened with one of my favorite refined sugar free options, coconut sugar! There is also no flour of any kind in these. There are only oats, which makes these gluten free if you use certified gluten free oats. Then for some flavor we’ve got vanilla extract and of course salt. Lastly we have the true stars of the show, white chocolate chips and blueberries. The combination of the two in these bars is truly amazing! I do find it harder to find healthy or better-for-you white chocolate chips, so I typically use Ghirardelli ones, which are phenomenal. But if you want a healthier option I love this company for all things chocolate and I’m sure they would be great, although they definitely are pricy.

How to make these White Chocolate & Blueberry Oatmeal Cookie Bars!

  1. Set the oven to 350 degrees.
  2. Combine the cashew butter, egg, applesauce, coconut sugar, and vanilla extract until smooth.
  3. In a separate bowl combine oats, baking powder, and salt.
  4. Add the dry ingredients to the wet and combine.
  5. Stir in the white chocolate chips.
  6. Spread the batter into a greased or parchment paper lined 8×8 baking pan.
  7. Top with more white chocolate chips (optional but highly recommended!) and blueberries. I chopped my blueberries in half and then placed them with the cut side down, but you could totally just leave them whole as well.
  8. Bake for 10 minutes.
  9. Let cool, cut into squares, and enjoy!

Also guys, a little side note. I highly highly recommend enjoying these cookie bars warmed up with a little bit of ice cream on top. It is truly phenomenal and you will not regret doing it!

Description

These White Chocolate & Blueberry Oatmeal Cookie Bars are a delicious and healthy treat!  They have an incredible chewy texture, juicy blueberries, sweet white chocolate, and are made with good-for-you ingredients.  


Ingredients

  • 1/2 cup cashew butter
  • 1 egg
  • 1 tbsp applesauce
  • 3/4 cup oats
  • 1/3 cup coconut sugar
  • 1/2 tsp vanilla extract
  • 1/8 tsp salt
  • 1/2 tsp baking powder
  • 1/4 cup white chocolate chips
  • about 1/4 cup blueberries — honestly however many you want!
