If you guys follow me on instagram, @wellnessbykay, you know that single serve oatmeal recipes have been my jam recently! Honestly, single serve anything. I love love love to make and eat these recipes and it seems like you guys do too! I think they need a permanent spot on the blog instead of just on my instagram. So I am bringing them here and starting off with this Single Serve Chocolate Chip Pumpkin Oatmeal! It is the perfect breakfast recipe for a cozy fall morning.

What you need for this Single Serve Chocolate Chip Pumpkin Oatmeal!

This recipe is definitely a little more casual than some of my others! It is super super easy to make and is customizable to your taste. This is mainly because you can adjust the amount of sweetener and/or spices to get the flavor just to your liking!

  • Pumpkin: This recipe requires a little bit of pumpkin puree! I just use from the can.
  • Oats: You can’t have oatmeal without oats! I use old fashioned.
  • Almond Milk: I always use unsweetened vanilla almond milk in my recipes, but you could use whatever milk you have on hand and enjoy. Dairy or non-dairy!
  • Pure Maple Syrup: Just a touch of pure maple syrup is used in this recipe to sweeten things up!
  • Chocolate Chips: I always use dairy free semi sweet chocolate chips, but once again use whatever kind you have on hand and enjoy!
  • Cinnamon, Pumpkin Pie Spice, & Vanilla Extract for all things flavor!
  • Baking Powder for perfectly cooked & fluffy oats!

How to make this Single Serve Chocolate Chip Pumpkin Oatmeal!

  1. Set the oven to 400 degrees.
  2. Combine the pumpkin, almond milk, pure maple syrup, and vanilla extract until smooth.
  3. Add in the oats and baking powder. Combine.
  4. Next add pumpkin pie spice and cinnamon to your liking.
  5. Stir in the chocolate chips.
  6. Pour the oatmeal mixture into a small baking dish or oven safe bowl.
  7. Top with more chocolate chips and an extra sprinkle of cinnamon.
  8. Bake for 20 minutes.
  9. Let cool and top with peanut butter & honey for ultimate deliciousness! Enjoy!!!

This Single Serve Chocolate Chip Pumpkin Oatmeal is the perfect breakfast for a cozy fall morning!  Loaded with warm cinnamon, pumpkin spice, & delicious chocolate, this oatmeal recipe will quickly become one of your favorites. 


Ingredients

  • 1/3 cup pumpkin, canned
  • 1/2 cup oats
  • 1/3 cup almond milk
  • 1 tsp baking powder
  • 12 tbsp maple syrup (depending on how sweet you want!)
  • 1 tbsp chocolate chips
  • 1/2 tsp vanilla extract
  • cinnamon (to taste!)
  • pumpkin pie spice (to taste!)
