Roasted Corn & Caprese Pasta Salad

I feel like I have mentioned this to you guys before, but I absolutely love summer and summer foods. Summer foods to me mean barbecue foods, and two dishes that are always on my family’s table at a barbecue are corn on the cob and a Caprese salad. I decided to combine the two with a simple ingredient that makes everything better, pasta. I present to you this deliciously fresh Roasted Corn & Caprese Pasta Salad. It is the perfect summer side dish and could even be the main course at dinner, it is just that good. It is refreshing, light, and bursting with flavor!

What you need for this Roasted Corn & Caprese Pasta Salad!

This pasta salad has four main elements … pasta, tomatoes, mozzarella cheese, and corn. Then there is the oil & vinegar dressing which is where that delicious Caprese flavor we all know and love comes in! You simply mix the four main ingredients together, pour on the dressing, and you have yourself a perfect pasta salad.

Main Ingredients

  • Pasta: I used whole wheat rotini in this recipe because I actually love the taste of whole wheat and think it is a fun & good shape for a pasta salad! But totally use whatever kind of pasta you have on hand and enjoy. You could do regular pasta, fresh pasta would be delicious, and chickpea would add a nice protein boost!
  • Tomatoes: I used grape tomatoes and simply cut them in half. I think they work really well in this recipe and the shape/size pairs nicely with the mozzarella. But you could also use any tomato you like!
  • Mozzarella Cheese: I used the small round mozzarella balls and also cut them in half like the tomatoes! I used this exact kind and used the whole container! However, you could also use fresh mozzarella slices and cut them into bite sized cubes.
  • Corn: The corn is such a lovely addition to a Caprese salad! I also pan roasted the corn which adds an amazing flavor element. I used fresh corn on the cob!

Dressing

  • Olive Oil: Olive oil is used multiple times throughout this recipe! The corn is pan roasted with it and it is used in the dressing. Make sure you use a high quality olive oil for the best taste!
  • Balsamic Vinegar: You can’t have a Caprese salad without some balsamic!
  • Balsamic Reduction: I love love love balsamic reduction and i think it is vital to this dressing! It enhances the balsamic flavor in a wonderful way. I also drizzled a little bit on top of the pasta salad for a delicious finishing touch.
  • Fresh Basil: I used fresh basil in this pasta salad because I think it gives both an unbeatable flavor and a beautiful look! But you could also use dried basil.
  • Seasonings: A mix of Italian seasoning, garlic powder, salt, and pepper is used in this dressing!

How to make this Roasted Corn & Caprese Pasta Salad!

  1. Start by boiling two large pots of water, one for the corn and one for the pasta.
  2. Cook the pasta according to the directions on the box.
  3. Boil the corn for 7 minutes.
  4. While you are waiting for the pasta and corn to cook, start chopping the tomatoes, mozzarella, and fresh basil. Chop both the tomatoes and mozzarella in half.
  5. Once the corn is done boiling transfer it to a plate.
  6. Add 1 tbsp of olive oil to a pan and heat to medium. Place the corn in the pan, season with salt and pepper. Pan roast on each side for a few minutes until brown and charred.
  7. Transfer the pasta to a large bowl. Add in the chopped tomatoes, mozzarella, and basil.
  8. Cut the corn off the cob and then add it to the pasta mixture as well.
  9. In a separate bowl or right on top of the pasta mixture combine the olive oil, balsamic vinegar, balsamic reduction, Italian seasoning, garlic powder, salt, and pepper. Mix everything together evenly.
  10. Top with some more fresh basil and a drizzle of balsamic reduction.
  11. Enjoy!

  • 16 oz pasta of your choice

  • 1/2 tsp garlic powder

  • salt & pepper to taste
