What are overnight oats?

Overnight oats are just what the name describes, oats made overnight by soaking in liquid! In this specific PB&J inspired recipe the old fashioned oats are soaked in yogurt and almond milk overnight or for at least a few hours. The result is a creamy, no-cook, healthy, and delicious breakfast recipe! Overnight oats are also super customizable and can pretty much be made with any flavor combination under the sun.

Ingredients needed for Peanut Butter & Jelly Overnight Oats…

These easy overnight oats call for all simple, classic, and pretty much pantry staple ingredients! They’re healthy, refined sugar free, and can also be gluten free if you use certified gluten free oats.

  • Oats: You simply cannot have overnight oats without oats! You will need 2 cups of old fashioned oats.
  • Greek Yogurt: Plain greek yogurt is my secret to perfectly creamy and protein filled overnight oats. 1 cup is the perfect amount!
  • Almond Milk: I always use unsweetened vanilla almond milk in my recipes, but you can honestly use the milk of your choice here. This recipe calls for 1 1/4 cup!
  • Peanut Butter: Peanut butter makes these oats extra creamy and delicious! I recommend using natural and runny peanut butter, with only peanuts and salt as the ingredients. You will need 1/4 cup + 1 tbsp!
  • Jelly: You can use any jam or jelly of your choice in these peanut butter and jelly oats! You can also make a homemade jam if you would like. Add about 1/3 cup!
  • Honey: A bit of honey is used to sweeten things up in this recipe! I love to use honey because it is a natural and refined sugar free sweetener. 3 tbsp is perfect!
  • Chia Seeds: Chia seeds are used here to thicken things up and create the perfect texture. They also have so many health benefits! Add 1 tbsp.
  • Vanilla Extract: Adding vanilla extract gives these creamy oats that classic flavor we all know and love! You will need 1 tsp!
  • Optional Toppings: Fresh berries, chopped peanuts, and extra peanut butter and jelly are all optional but highly recommended toppings. So yummy!

Other flavor variations for Peanut Butter Overnight Oats…

These PB&J Overnight Oats are pretty much peanut butter overnight oats with jelly swirled throughout! So if you love this peanut butter base and want to try it out with a different flavor or your not a a big fan of jelly, just leave the jelly out. Then you can add in anything else you would like to the peanut butter oats!

I suggest banana or fresh berries, chocolate chips, cinnamon, caramel sauce, or some mixed nuts. All would be absolutely scrumptious additions to this healthy oatmeal recipe!
