Peanut Butter Banana Overnight Oats

I think we can all agree that one of the best flavor combinations known to man is peanut butter and banana.  And if you throw in some chocolate!  Ughh it’s truly the best.  I love peanut butter banana toast, i love a peanut butter banana smoothie, i love this chunky monkey granola, and most importantly i love these Peanut Butter Banana Overnight Oats.  They are incredibly creamy, loaded with sweet banana flavor, easy to make, deliciously satisfying, AND they have chocolate.  And to me chocolate for breakfast is always a must!!!

What you need for these Peanut Butter Banana Overnight Oats!

  • Oats: Ya’ll if you know me, you know my love for oats.  So dang good in so many forms.  And it’s overnight oats people so we of course need them!  I used old fashioned, but I think you could use quick oats as well.
  • Banana:  I love the flavor and natural sweetness that bananas can give oatmeal or a baked good!  Make sure to use a spotty ripe one for the best results.
  • Greek Yogurt: I use greek yogurt in all my overnight oat recipes and even sometimes add on top of hot oatmeal!  I love the creaminess it adds and the protein boost.
  • Peanut Butter: Peanut butter. One of my favorite foods of all time! I honestly usually have it at least once a day and I think we all know how wonderfully it goes with bananas. It makes these oats so creamy and so flavorful! I also use natural peanut butter which is just peanuts and salt.
  • Pure Maple Syrup: Whenever I use maple syrup in a recipe it is pure maple syrup, not your typical Aunt Jemima syrup. It is one of my favorite refined sugar free sweeteners and tastes so so delicious. You could swap the pure maple syrup with a different liquid sweetener of choice such as honey.
  • Chocolate Chips: I guess this ingredient is optional, but like is it really? Chocolate is never optional for me and I love using dairy free chocolate chips!
  • Almond Milk: I always use unsweetened vanilla almond milk, but you could basically use any milk you want!
  • Chia Seeds: Chia seeds are a magnificent little seed that have so much nutritional value! They are a great source of omega 3 fatty acids, antioxidants, and fiber. But they are mostly used in this recipe for their absorbing abilities! They absorb the liquid in these oats and thicken things up, resulting in the best texture.
  • And lastly a touch of Vanilla Extract, Cinnamon, and Salt for all things flavorrrrr!!

How to make these Peanut Butter Banana Overnight Oats!

You guys these oats are about as easy and simple as it gets. They require absolutely no cooking … just one bowl, some mixing, and the fridge. Plus you can make them once and have breakfast for a few days! It is the ideal situation, especially if you want a little extra sleep in the morning.

  1. In a large bowl, or straight in what you will be storing the oats in, mash the banana.
  2. Then add in the greek yogurt, peanut butter, almond milk, maple syrup, vanilla extract, and combine.
  3. Stir in the oats, cinnamon, chia seeds, chocolate chips, and a pinch of salt.
  4. Place in the fridge overnight or for a few hours.
  5. In the morning top with more banana, peanut butter, and chocolate chips or whatever toppings you like.
  6. Enjoy!

How many servings does this recipe make?

This recipe made 3 servings for me! However, I think it could actually make 2-4 depending on your hunger levels and how many additional toppings you put on.

Are these oats eaten cold?

Yes, these overnight oats are eaten cold! It might sound weird, but trust me they are delicious. You could try heating them up, but things might get a little funky because of the yogurt.

How do I store these oats?

These overnight oats can be stored in the fridge for about five days! I think you could extend it to a week, but the banana may get a little brown.

Ingredients

  • 1 mashed banana
  • 1/2 cup greek yogurt
  • 3 tbsp peanut butter
