YOU GUYS! Sorry to scream, but I had to get your attention for my following statement. If you make any of my recipes, make this one! These Oatmeal Cookie Sandwiches with a Cream Cheese Filling are quite literally amazing. Like thats all I can say about them. I know I’m tooting my own horn, but I have evidence to prove it. My sister said these were her favorite treat I have ever made AND that they taste like they could be from a bakery. And honestly, that might just be the highest praise I could ever receive.

No but seriously I know you guys will love these cookie sandwiches!  They are made with slightly better-for-you ingredients, have a perfect chewy and a little bit crumbly cookie texture, and a sweet and tangy cream cheese filling.  Pretty sure what I just described is what dreams are made of!  Or maybe just mine.

What you need to make these Oatmeal Cookie Sandwiches with Cream Cheese Filling!

  • butter
  • egg
  • cream cheese
  • almond flour
  • oat flour
  • oats
  • maple syrup
  • coconut sugar
  • vanilla extract
  • cinnamon
  • baking powder
  • salt

Okay first lets talk about the cookie layer!  They are essentially incredibly chewy, incredibly cinnamony, and incredibly delicious cookies.  They would be out of this world on their own, but with the cream cheese filling … it’s perfection.  Anyway, back to the cookies!  Butter is used in these cookies and gives them that taste that we all know cannot be beat with other ingredients like coconut oil or nut butter.  These cookies needed the real deal!  Then for flour I used a mix of almond flour, oat flour, and regular oats.  This combination makes the cookies gluten free, as long as you use certified gluten free oats and oat flour, and also gives them the perfect texture.

Next up for sweetness there is some pure maple syrup!  One of my absolute favorite refined sugar free options.  And for flavor I used a splash of vanilla extract and cinnamon, lots and lots of cinnamon.  I just feel like oatmeal cookies need to be bursting with cinnamon to get that warm and comforting flavor.

Moving on to the cream cheese filling!  I one hundred percent believe that a dessert with some sort of cream cheese filling or frosting is one hundred percent better than a dessert without.  I just love cream cheese frosting … it reminds me of some of my very very favorite treats, like cinnamon rolls and carrot cake. And the cream cheese filling in these cookies is definitely better-for-you as it replaces the traditional powdered sugar with pure maple syrup.

How to make these Oatmeal Cookie Sandwiches with Cream Cheese Filling!

  1. Set the oven to 350 degrees.
  2. Combine the butter and egg with a hand mixer until smooth.
  3. Add in the maple syrup and vanilla extract and mix again.
  4. In a separate bowl combine the almond flour, oat flour, oats, cinnamon, baking powder, and pinch of salt.
  5. Add the dry ingredients to the wet ingredients and stir to combine.
  6. Place in the fridge for about 10 minutes to chill.
  7. Remove the dough for the fridge and roll into small balls, less than a tablespoon sized scoops.
  8. Place the balls onto a greased or parchment paper lined baking tray and flatten them with your fingers. There should be 24 cookies.
  9. Bake for 10 minutes.
  10. While the cookies are baking, make your cream cheese filling. Combine the cream cheese, butter, maple syrup, and vanilla extract with a hand mixer.
  11. Remove the cookies from the oven. Place the cream cheese filling in the fridge to cool and set a little while the cookies cool.
  12. Once the cookies have cooled, place a generous dollop of the filling on 12 of the cookies. Top each cookie (with filling) with another cookie (without filling) and press down to make the filling spread out. You will have 12 cookie sandwiches!
  13. Enjoy!

Ingredients

Cookies

  • 1/3 cup butter softened
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/4 cup pure maple syrup
  • 1 cup almond flour
  • 1 cup oats
  • 1/2 cup oat flour (read the notes for how you can make your own!)
  • 2 tsp cinnamon
  • 1/2 tsp baking powder
  • pinch of salt
  • coconut sugar (just a little bit to sprinkle on top of each cookie!)

Cream Cheese Filling

  • 2 tbsp softened butter
  • 3 tbsp cream cheese
  • 1 tbsp pure maple syrup
  • 1/4 tsp vanilla extract

Instructions

  12. Remove the cookies from the oven. Place the cream cheese filling in the fridge to cool and set a little while the cookies cool.

Notes

  • You can make your own oat flour by simply blending oats in a high speed blender or food processor until a fine flour forms.
