Ground Turkey Sweet Potato Bake

Welcome to pretty much the easiest recipe of all time.  Okay maybe a bold statement and possibly an exaggeration, but let me tell you … this Ground Turkey Sweet Potato Bake is pretty dang easy.  You basically throw a few main ingredients together along with some seasoning and you’re good to go.  And of course parmesan cheese because you can never forget the cheese!  It is also the perfect meal prep meal … filling, healthy, and delicious.  I have been enjoying it on it’s own and have even thrown an egg on top for some extra protein!

What you need for this Ground Turkey Sweet Potato Bake!

You only need seven ingredients to make  this Ground Turkey Sweet Potato Bake! Plus salt and pepper, but I do not count those.  It is also a completely gluten free dish!

  • Ground Turkey: I used ground turkey as the protein source in this recipe. I’m sure you could use ground beef or ground chicken if you prefer!
  • Sweet Potato: I am a big fan of sweet potato! It is absolutely delicious and such a satisfying element to add into any dish. It goes so good with the rest of the flavors in this bake too!
  • Zucchini: I think I have to say that zucchini is my favorite vegetable! In my opinion it goes with literally any dish and this one is no different.
  • Parmesan Cheese: I am a firm believer that everything tastes better with some cheese on top! I chose parmesan for this recipe because of the strong flavor.
  • Olive Oil: You could use whatever oil you like in this recipe, I chose olive!
  • Garlic Powder & Rosemary: I am all about simple when it comes to recipes and especially the seasonings & spices in a recipe. I just stuck to my favorite, garlic powder, and added in rosemary for a little bit of an elevated flavor. So tasty!
  • Salt & Pepper. Of course.

How to make this Ground Turkey Sweet Potato Bake!

  1. Set the oven to 400 degrees.
  2. Start by peeling and chopping the sweet potatoes. Place in a large baking dish and toss with 2 tbsp olive oil, 1/2 tsp garlic powder, 1/2 tsp rosemary, salt, and pepper.
  3. Bake for 30 minutes.
  4. While the sweet potatoes are in the oven, brown the ground turkey in a pan. Sauté with 1 tbsp olive oil, 1 tsp garlic powder, 1/2 tsp rosemary, salt, and pepper. (lots of s + p)
  5. Also chop up the zucchini. Cut into slices and then each slice into halves or quarters depending on the size.
  6. Remove the sweet potato from the oven. Add in the cooked ground turkey and chopped zucchini. Combine.
  7. Bake for 10 minutes.
  8. Remove from the oven. Add in an additional 2 tbsp olive oil and combine evenly.
  9. Top with 2/3 cup shredded parmesan cheese.
  10. Bake for 10 minutes.
  11. Remove from the oven and enjoy!
