Chewy Peanut Butter Chocolate Granola Bars

These Chewy Peanut Butter Chocolate Granola Bars have been a long time coming! I have been wanting to make an easy and healthy copycat chewy granola bar for quite some time now. I of course went with peanut butter chocolate flavored because it is truly the best flavor combination out there! These no-bake bars are made with old fashioned oats, crunchy peanuts & brown rice cereal, and of course some delicious chocolate on top. They make for an absolutely perfect healthy snack that kids and adults alike will enjoy.

What you need to make these Chewy Peanut Butter Chocolate Granola Bars!

These homemade granola bars are made with all healthy, wholesome ingredients. They are gluten free, dairy free, and refined sugar free!

  • Peanut Butter: The base of these peanut butter chocolate chewy granola bars is of course peanut butter. I use runny, natural peanut butter for ultimate deliciousness!
  • Honey: Honey is used for natural, refined-sugar free sweetness in these granola bars. You could replace this with a different liquid sweetener of choice, such as pure maple syrup!
  • Oats: I used old fashioned oats in this recipe and they worked wonderfully! They oats create the wonderfully chewy texture in these bars.
  • Brown Rice Cereal: Puffed brown rice cereal adds a chewy & crunchy texture to these bars at the same time. You can find this cereal in most grocery stores!
  • Peanuts: I decided to add chopped peanuts into these bars for another textural element and of course to add to the delicious peanut butter flavor already going on!
  • Dairy Free Chocolate Chips: Chocolate chips are mixed in throughout these no-bake bars. They are also melted down and drizzled on top! I always use dairy free semi sweet chocolate chips, but use whatever chocolate you have on hand or enjoy.
  • Oat Flour: I used a small amount of oat flour to help hold these bars together!
  • Lastly Vanilla Extract, Cinnamon, & Salt for all things flavor!

How to make these Chewy Peanut Butter Chocolate Granola Bars!

  1. Start by evenly combining the peanut butter, honey, and vanilla extract.
  2. Then add in the oats, oat flour, brown rice cereal, chopped peanuts, chocolate chips, cinnamon, and salt. Combine evenly.
  3. Press and flatten the mixture down into a 8×8 baking dish.
  4. Melt the dairy free chocolate chips with coconut oil. You can do increments in the microwave or in a double boiler.
  5. Drizzle the chocolate over the granola bars. Optional: Top with more crushed peanuts!
  6. Place in the fridge for 1-2 hours to set.
  7. Remove from the fridge, cut into 10 bars, and enjoy!

Ingredients

  • 1/2 cup peanut butter (runny & natural kind!)
  • 1/4 cup + 1 tbsp honey
  • 1 cup oats
  • 1 cup brown rice cereal
  • 1/4 cup chopped peanuts (plus more for on top!)
  • 1/2 cup dairy free chocolate chips (separated)
  • 1/2 tsp vanilla extract
  • 1 tsp coconut oil
  • 1/2 tsp cinnamon
  • 2 tbsp oat flour
  • salt

Instructions

  1. Start by evenly combining the peanut butter, honey, and vanilla extract.
  2. Then add in the oats, oat flour, brown rice cereal, chopped peanuts, chocolate chips (1/4 cup), cinnamon, and salt. Combine evenly.
  3. Press and flatten the mixture down into a 8×8 baking dish.
  4. Melt the dairy free chocolate chips (1/4 cup) with the coconut oil. You can do increments in the microwave or in a double boiler.
