Nothing screams fall or colder weather quite as much as a warm bowl of oatmeal! Especially when that bowl is Pumpkin Pie Oatmeal with Candied Pecans. So so good. This recipe has all the delicious flavors of pumpkin pie in a creamy, healthy, and relatively easy breakfast! Plus the candied pecans are definitely the showstopper here. They add an amazing crunch and are so freaking tasty I literally want to put them on everything!

What you need to make this Pumpkin Pie Oatmeal with Candied Pecans!

Oats

  • Oats: Of course you need oats. I used old fashioned!
  • Almond Milk: I use unsweetened vanilla almond milk, but you could use any milk you like or have on hand.
  • Pumpkin: You also of course need pumpkin! I just buy canned pumpkin. I don’t typically use the whole can in one go, so you can just store the rest in an airtight container in the fridge!
  • Maple Syrup: I used a touch of pure maple syrup for some sweetness in this oatmeal. You could use a different liquid sweetener of your choice, but I think maple syrup adds a delicious fall flavor.
  • Cinnamon, Pumpkin Pie Spice, Vanilla Extract, and Salt for flavor.

Candied Pecans

  • Pecans: I used pecans in this recipe, but I think you could totally swap with a different nut if you would like.
  • Butter: I used a little bit of butter for these candied nuts because I was going for that rich flavor, but you could swap with any oil of your choice.
  • Maple Syrup again!
  • Cinnamon again!

How to make this Pumpkin Pie Oatmeal with Candied Pecans!

  1. Start on the candied pecans. Add the pecans to a pan with the butter, maple syrup, and cinnamon. Sauté on medium to high heat until crunchy and then remove from the heat.
  2. While the pecans are cooking start on the oatmeal. Add the oats, pumpkin, and almond milk to a pot and cook as you would any oatmeal.
  3. Add in the cinnamon, pumpkin pie spice, maple syrup, vanilla extract, and salt. Simmer until thick.
  4. Add the oatmeal to a bowl. Top with the candied pecans. I also suggest topping with more cinnamon and a splash of maple syrup.
  5. Enjoy!

Can I save and re-heat this oatmeal?

Yes, you definitely can! This recipe makes about 2 servings, so if you are making for one person you can simply store the rest in the fridge. I stored in an airtight container and just popped in the microwave with a splash of almond milk to re-heat. I also stored the pecans in an airtight container on the counter to keep them crunchy!
