Peanut Butter Crunch Cups

Welcome to the easiest recipe i have ever made! These Peanut Butter Crunch Cups are a mix between two of the best chocolate candies out there, crunch bars and peanut butter cups. And as mentioned before .. they are SO dang easy to make. They are little bite sized, crunchy textured, and peanut butter filled sweet treats. Plus these crunch cups are made with healthy, good-for-you ingredients! A true must make that is sure to satisfy all your chocolate cravings.

What you need for these Peanut Butter Crunch Cups!

You guys I was not kidding when I said these were easy. Like four ingredient, no-bake easy. These Peanut Butter Crunch Cups require no cooking at all besides melting down your chocolate chips, the rest is done in the freezer! I also was not kidding when I said these were a better-for-you alternative to your traditional chocolate candy. These cups are completely gluten free and vegan!

  • Chocolate Chips: I used dairy free chocolate chips, as I do in all my recipes, in these cups to make them completely vegan. But you could totally use any kind of chocolate you like.
  • Brown Rice Puffs: Here are the brown rice cereal puffs that I used. They have minimal ingredients and are gluten free! They also give a crunch exactly like the one in a real deal crunch bar.
  • Peanut Butter: I always use a natural peanut butter. Try to look for one with just peanuts and salt as ingredients. This kind is much better for you and tastes better too!
  • Coconut Oil: A little bit of refined coconut oil is melted with the chocolate! Make sure to use refined coconut oil, unrefined will leave your treats tasting like coconut.

How to make these Peanut Butter Crunch Cups!

  1. Slowly melt the chocolate chips and coconut oil in a double boiler over low heat.
  2. Once the chocolate has melted, transfer it to a mixing bowl and add in the rice cereal. Combine.
  3. Grab a mini muffin/cupcake tin and add small spoonfuls of the chocolate mixture to each cup.
  4. Next add about 1 tsp of peanut butter on top of the first chocolate layer. Try to keep the peanut butter in the center.
  5. Then add another spoonful of the chocolate mixture to each treat. Spread out the mixture as best as you can in order to cover the peanut butter. This will make 12 cups.
  6. Place in the freezer for about 30 minutes to set.
  7. Enjoy!
  8. Store in the fridge.

    Where do you find dairy free chocolate chips? I can’t wait to make these

      I buy the Enjoy Life brand and can usually find them in any grocery store! Either in the regular baking section or in the more health foods section. You can definitely find them at Whole Foods though!

    My sister is dairy free and I made these for Halloween and she and my whole family loved them!! So easy to make yet so good, I will 100% make again
