Peanut Butter and Jelly Mug Cake

I think I might be queen of the peanut butter and jelly flavor combination. I know, I know … bold statement. But, I honestly think its true! If you follow me on instagram, @wellnessbykay, my love for this flavor combination truly shines through with my deliciously messy sourdough sandwiches. It also of course shines through in one of my proudest recipes yet, homemade peanut butter and jelly pop tarts. And now in this Peanut Butter and Jelly Mug Cake! It is just such a good combo and I try to enjoy it in anyway possible as often as possible. This mug cake is perfect for that because it makes a pb&j inspired sweet treat in like under 10 minutes!

What you need for this Peanut Butter and Jelly Mug Cake!

  • egg
  • peanut butter (natural runny kind!)
  • applesauce
  • vanilla extract
  • pure maple syrup
  • almond milk
  • whole wheat pastry flour or all purpose flour
  • jelly of choice
  • baking powder
  • salt

I love this mug cake because it is truly one of the easiest treats you could possibly make! Plus it is especially great for these times when it can be hard to find baking supplies. You only need a small amount of each ingredient because it is a single (maybe double) serving goodie! So hopefully it won’t drain you of those precious baking supplies.

The ingredients are also pretty simple! We’ve got peanut butter and jelly, as would be expected in a pb&j mug cake. For the peanut butter use the natural and runny kind and for the jelly use whichever is your favorite or whatever you have on hand! Then for some sweetness and additional flavor there is applesauce, vanilla extract, pure maple syrup, and of course salt. Lastly, I have tested this mug cake with two different flours and both work perfectly. You can either use whole wheat pastry flour, my personal favorite, or all purpose flour.

How to make this Peanut Butter and Jelly Mug Cake!

  1. In a (medium/large) mug combine the egg, peanut butter, apple sauce, maple syrup, almond milk, and vanilla extract until smooth.
  2. Add in the flour, baking powder, and salt. Combine until smooth.
  3. Drizzle the peanut butter and jelly on top of the batter. Make the swirl design with a knife or toothpick. This will help the jelly to distribute throughout the cake, but don’t mix it completely in!
  4. Microwave for 2 minutes.
  5. Enjoy!

This Peanut Butter and Jelly Mug Cake is probably the easiest sweet treat you could make!  It has a perfect peanut butter flavor, delicious jelly swirls throughout, a fluffy texture, and is made with good-for-you ingredients.

Ingredients

Batter

  • 1 egg
  • 2 tbsp peanut butter (natural & runny kind!)
  • 2 tbsp applesauce
  • 1 tbsp almond milk

  • 2 1/2 tbsp whole wheat pastry flour or all purpose flour
  • 1/4 tsp vanilla extract
  • 1/4 tsp baking powder
  • pinch of salt

PB&J Swirl

  • 1/2 tbsp peanut butter
  • 1 tbsp jelly of choice

Instructions

  1. Can you use an egg replacer to make this vegan? If so do you have any recommendations?

      Hi Mariana, I have not tested an egg replacer but I am sure you could try! I would recommend trying a flax egg although again I can’t guarantee that it will work. 🙂
