You guys! I am on such a peanut butter chocolate kick these days! I mean I always am, but this Chunky Monkey Granola is my second recipe in a row with the delicious flavor combo. The first recipe was these peanut butter pretzel brownies and they are very very delicious. I highly recommend checking them out!

But back to the granola because that is what you are all here for! And let me to tell you it will not disappoint. It is super simple and tastes absolutely delicious! I’m not going to lie to you guys, I have most definitely eaten half of the batch already … its just that good. And my favorite part of this recipe is that it only requires one banana! I absolutely love banana bread and banana muffins, but those goodies typically require two or three bananas. Sometimes I just don’t have that many ripe bananas, you know? So this recipe is perfect for when you only have one on hand! Plus it pretty much tastes like delicious peanut butter chocolate banana bread, but in a much easier granola form.

What you need for this Chunky Monkey Granola!

  • banana
  • peanut butter
  • olive oil
  • maple syrup
  • oats
  • dairy free chocolate chips
  • vanilla extract
  • cinnamon
  • salt

This granola requires only a few simple and healthy ingredients and is so so easy to make! The main ingredient is oats. I use quick oats and I’m not positive that other kinds of oats would work, but I do think that they would! Then you pretty much douse the oats in peanut butter banana deliciousness. This deliciousness is made of a combination of peanut butter, mashed banana, olive oil, maple syrup, vanilla extract, cinnamon, and salt. The mashed banana is actually the main source of sweetness in this granola which I love! There is also a tiny bit of pure maple syrup, which is a great refined sugar free option. Olive oil is also used to get the granola all crispy and crunchy. I’m sure you could use melted coconut oil in its place if you wanted to! Then we got all the usual suspects for flavor … vanilla extract, cinnamon, and of course salt.

How to make this Chunky Monkey Granola!

  1. Set the oven to 325 degrees.
  2. Mash one banana in a large bowl. Should be about 1/4 cup.
  3. Combine the peanut butter, olive oil, maple syrup, vanilla extract, cinnamon, and salt on the stove over low heat.
  4. Then combine this mixture with the mashed banana.
  5. Add the oats to the mixture and mix well. You want to thoroughly and evenly coat the oats.
  6. Next get a baking tray and line it with parchment paper. Pour the granola onto the tray and spread it out very thin with a spatula. You want it to be thin so the granola can get crispy and crunchy!
  7. Bake for 15 minutes.
  8. Remove from the oven and top with chocolate chips and peanut butter. Evenly sprinkle the chocolate and drizzle the peanut butter.
  9. Bake again for 5 minutes.
  10. Remove from the oven and spread out the melty chocolate chips and peanut butter.
  11. Let the granola cool completely before touching it. This is very important if you want the granola to get crispy and crunchy.
  12. Once it is completely cooled break it up into small chunks.
  13. Store in an air tight container and enjoy!

Description

This Chunky Monkey Granola is a delicious combination of banana, peanut butter, and chocolate.  It is super easy to make and only requires a few simple and healthy ingredients!  Makes for a great topping to yogurt or smoothie bowls and is perfect on its own as a snack.


Ingredients

  • 2 tbsp dairy free chocolate chips
  • 1 tbsp maple syrup
  • 1/2 tsp vanilla 
  • sprinkle of cinnamon, probably about 1/2 tsp
  • pinch of salt
