Lemon Oatmeal Energy Balls

I have been wanting to make something lemon for a long time now. I mean it is pretty much the ultimate spring flavor. But i also wanted whatever I made to be easy! So I thought of these Lemon Oatmeal Energy Balls. They only require a few healthy ingredients, are no-bake, and come together in like 15 minutes, not including the time in the fridge to set. If you are like me and want lemon but also want easy, these delicious little bites will be absolutely perfect for you!

What you need for these Lemon Oatmeal Energy Balls!

  • dates
  • oats
  • cashew butter
  • lemon
  • honey
  • vanilla extract
  • almond flour

And that’s all you need, just 7 ingredients! The balls are mainly naturally sweetened with dates, although there is also a tiny bit of honey. Not only are the dates a delicious natural sweetener, but they also load these balls with fiber and antioxidants. Then we have cashew butter! The cashew butter adds a creamy texture and also helps to hold these balls together. I chose to use cashew butter because it has the most neutral flavor, as opposed to almond butter or peanut butter, that I believe works deliciously with the lemon. I think you could also try almond butter, although I have not!

Next up is the oats and almond flour! They are both used in this recipe to thicken things up, and create a mixture that can be easily rolled into balls. Then lastly of course we have lemon! I used both lemon juice and lemon zest in these balls. The combination of the two create the most wonderful lemon flavor, and I wold not recommend leaving either out!

How to make these Lemon Oatmeal Energy Balls!

  1. First soak the dates (with the pits removed!) in hot water for about an hour. You can’t skip this step! It is very important to soften the dates to be able to blend.
  2. Blend the dates in a food processor with the cashew butter, lemon juice, lemon zest, honey, and vanilla extract until smooth. It is okay if there are some remaining date chunks. I have not tried with a high speed blender, but it should also work!
  3. Then add in the oats and continue to blend. The oats will not completely blend in and that is okay! They will add a nice texture.
  4. Then remove the mixture from the food processor and add to a bowl. Stir in the almond flour to thicken.
  5. Cool in the fridge for about 15 minutes.
  6. Remove from the fridge and roll about teaspoon sized spoonfuls of the mixture into balls. Place on a baking tray.
  7. Cool again in the fridge on the baking tray for another 15 minutes to ensure they are set.
  8. Then you can move them to a container and store in the fridge.
  9. Enjoy!

Lemon Oatmeal Energy Balls

These Lemon Oatmeal Energy Balls are the perfect little bite sized goodie!  They are made with a few simple & healthy ingredients, are no-bake, and are filled with delicious lemony goodness.  Great as a pre-workout or afternoon snack!

Ingredients

Scale
  • 1/2 cup soaked and chopped dtaes

Notes

  • You must soak the oats before blending!

    Would you recommend sticking to cashew butter, or is another nut butter okay for this recipe? Thanks so much!! <3

      I would recommend cashew butter! Almond butter might work because it also has a neutral flavor, but I would not do peanut butter.
