Blueberry Muffins with Lemon Coconut Glaze

I am channeling spring with these muffins! With everything going on in the world I think we all need something to brighten things up. I cannot think of anything better to do just that than these Blueberry Muffins with Lemon Coconut Glaze. I mean I truly don’t think anything screams spring more than blueberry muffins, especially with the hint of lemon flavor.

What you need for these Blueberry Muffins with Lemon Coconut Glaze!

  • oat flour
  • almond flour
  • coconut sugar
  • almond milk
  • eggs
  • olive oil
  • maple syrup
  • baking powder
  • vanilla extract
  • blueberries
  • lemon juice
  • coconut butter

First off, these Blueberry Muffins with a Lemon Coconut Glaze are dairy free and refined sugar free. They can also be gluten free depending on how you view oats and oat flour. Also, to ensure these are gluten free you can use certified gluten free oats. Speaking of oat flour, I know sometimes people find it difficult to find. If this is you, it is super easy to make yourself and it what I always do. You simply blend oats in a high speed blender or food processor until a fine flour is formed. That is literally it! In these muffins the oat flour is combined with almond flour which I think creates an absolutely perfect texture. The muffins are sweetened with coconut sugar and a splash of maple syrup, my two absolute favorite sweeteners! They make these muffins refined sugar free. Then lastly the muffins get their flavor from the vanilla extract, lemon juice, and of course blueberries!

Now time for the lemon coconut glaze! The base of this glaze is coconut butter and is so simple. It takes five ingredients and thirty seconds. Those five ingredients are the coconut butter, vanilla extract, maple syrup, lemon juice, and almond milk. You simply mix the specified amounts together and microwave for thirty seconds! I also think this glaze is extremely customizable. I recommend adding more maple syrup if you want it sweeter or more lemon juice if you want more of that lemon flavor. Totally up to you!

How to make these Blueberry Muffins with Lemon Coconut Glaze!

  1. Set the oven to 375 degrees.
  2. First combine all the dry ingredients. Oat flour, almond flour, coconut sugar, and baking powder.
  3. Combine the wet ingredients in a separate bowl. Eggs, almond milk, maple syrup, olive oil, vanilla extract, and lemon juice.
  4. Add the wet ingredients to the dry ingredients and combine until smooth.
  5. Stir in the blueberries.
  6. Pour the batter to a greased or lined muffin tin and top with additional blueberries. The batter should make 9 muffins.
  7. Bake for 15 minutes.
  8. While the muffins are baking make the coconut lemon glaze. Combine coconut butter, maple syrup, vanilla extract, lemon juice, and almond milk. Microwave for 30 seconds and stir after.
  9. Remove the muffins from the oven and let cool.
  10. Once the muffins have cooled, drizzle the glaze on top.
  11. Enjoy!

Muffins

  • 1 cup oat flour
  • 1 cup almond flour
  • 1/3 cup coconut sugar
  • 1/2 cup almond milk
  • 2 eggs
  • 1 tbsp olive oil
  • 1 tbsp maple syrup
  • 2 tsp baking powder
  • 1 1/2 tsp vanilla extract
  • 2 tbsp lemon juice
  • 1/2 cup blueberries

Glaze

  • 2 tbsp coconut butter
  • 2 tbsp almond milk
  • 1 tsp vanilla extract
  • 2 tsp lemon juice (more if you want a more lemony flavor.  add to taste!)
  • 2 tsp maple syrup
