Caramel Apple Loaves

You guys this recipe could be my best one yet. I know I say that a lot, but this time I am being completely and utterly serious. You know how I know this? I have literally made these Caramel Apple Loaves four times and have never gotten good photos of them because I eat them too fast. I literally have one and half loaves left and I made them two days ago. They are just that good! They have that fall cinnamon apple flavor going on, but can obviously be enjoyed all year long, as I of course do.

These loaves are perfectly fluffy and soft, great for breakfast or at night with a cup of tea. But if you’re like me they will be gone before you get the chance to do either of those! And the caramel sauce is out of this world, i’m pretty sure I will be drizzling it on anything and everything from now on. Plus the loaves and the caramel are both actually made with super healthy and simple ingredients even though they taste deliciously indulgent.

What you need for these Caramel Apple Loaves!

  • oats (blended into oat flour) or regular oat flour
  • apples
  • tahini
  • coconut sugar
  • eggs
  • almond milk
  • vanilla extract
  • cinnamon
  • baking powder
  • maple syrup

Another reason why I love these loaves is because they are made with good-for-you ingredients, but also do not sacrifice taste in anyway. That is literally my perfect dessert! The base of these is oat flour. Whenever I make a recipe with oat flour I always just make my own! It is super simple and more cost effective than buying oat flour from the store. Literally all you do is blend oats in a high speed blender until a fine flour forms! I believe a food processor would also work, but I am not one hundred percent sure. This also means that these loaves are gluten free if you use certified gluten free oats!

Tahini is also used in this recipe! Tahini is just ground sesame seeds and I absolutely love baking with it. You can find Tahini in most stores, but if you can’t I think you would be able to use a different nut butter in place of it in this recipe, although I have never tried it. However, tahini is super runny and liquidy so the replacement would also have to be so as well, in order to yield the same results.

These loaves are sweetened with apple and coconut sugar, which makes them refined-sugar free. There is also vanilla extract and cinnamon in this recipe, which gives the loaves that deliciously warm fall flavor we all know and love! Lastly, the caramel sauce is simply made with equal parts coconut sugar, almond milk, tahini, and maple syrup. It tastes just as good as the real deal without any heavy cream or white sugar.

How to make these Caramel Apple Loaves!

  1. Set the oven to 350 degrees.
  2. Combine the egg, almond milk, coconut sugar, tahini, and vanilla extract until smooth.
  3. Add in the oat flour, apple, cinnamon, and baking powder.
  4. Pour the batter into a greased mini loaf pan.
  5. Bake for 15 minutes.
  6. While the loaves cool start making the caramel sauce. Simply combine the tahini, almond milk, coconut sugar, and maple syrup on the stove. Slowly heat until the mixture bubbles and starts to thicken.
  7. Drizzle the loaves with the caramel sauce.
  8. Enjoy!

What if I don’t have a mini loaf pan?

If you do not have a mini loaf pan, this recipe can be made into one big loaf or even muffins. I have never tried in a muffin tin, but I think these would actually work great as muffins. I would assume that they would require a very similar baking time, but if you do make them into muffins just do the classic toothpick trick! Stick them with a toothpick, fork, or knife and if it comes out clean you know that they are ready.

I have made these mini loaves into one big loaf, and it worked out perfectly! All you have to do is double the recipe and bake for a longer time, around 40-50 minutes. And once again just do the toothpick trick to make sure the loaf is ready!

Apple Loaves
