Cauliflower Potato Soup

I don’t know about you guys, but in the winter I’m all about the warm and cozy meals. This Cauliflower Potato Soup is just that! It is healthy, hearty, creamy, and delicious! What more could you want on a cold winter day? What I love about this soup is that it is so so creamy and thick, but is not filled with any cream or heavy ingredients like that. It is basically blended up cauliflower and potato! Of course there’s some more goodness in there, but you know what I mean!

What you need for this Cauliflower Potato Soup?

  • carrots
  • onions
  • celery
  • cauliflower
  • potatoes
  • olive oil
  • garlic powder
  • no salt seasoning
  • veggie broth
  • onion onion seasoning or onion powder
  • cheddar cheese
  • salt

This soup is super super simple! It is essentially 6 ingredients with a whole bunch of delicious seasonings. The main ingredients are carrots, onions, celery, cauliflower, potatoes, and cheddar cheese. For the seasonings, I used a couple specific ones that I’m pretty sure not everyone would have on hand, but they can easily be replaced with more common ones. I used this onion onion seasoning, but you could totally just use regular onion powder and some extra salt in it’s place! I also used the no salt seasoning from Costco. It is essentially garlic powder with some dehydrated veggies too! To swap for this I would just add more of every other seasoning listed or add in some of your favorites. This soup is super adjustable and customizable, and I honestly don’t think you could go wrong with whatever seasonings and spices you use!

How to make this Cauliflower Potato Soup!

  1. Chop the cauliflower and potatoes. Coat in 2 tbsp olive oil and garlic powder, no salt seasoning, and salt.
  2. Roast for 20 minutes at 350.
  3. While the potato and cauliflower are in the oven, sauté the carrots, onions, and celery in more olive oil until soft.
  4. Remove the potato and cauliflower from the oven and add them into the pot with the other veggies.
  5. Add in 2 cups of water, 2 cups of veggie broth, and the onion onion seasoning. You can replace this with onion powder and some more salt!
  6. Cover the pot and simmer until the potatoes are soft. You may need to add additional liquid.
  7. Once the potatoes are soft add the majority of the soup to a blender, leaving some potato and cauliflower chunks for texture. Blend with 1/2 cup of water + 1/2 cup of veggie broth until smooth. (Use more veggie broth or water as needed!)
  8. Pour the blended soup back into the pot.
  9. Turn the soup to low heat and add in the cheddar cheese.
  10. Let the cheese melt into the soup and add in any additional seasonings! I recommend some salt and pepper to taste.
  11. Simmer for a few more minutes to let all the flavors combine and then enjoy!

  • 1/2 cup chopped onions

  • 24 oz cauliflower (2 bags)
  • 2 small gold potatoes (approximately 3 cups)

  • 1 tsp no salt seasoning
  • 1 tsp onion onion seasoning (could swap with normal onion powder + more salt)
  • 2 1/2 cups veggie broth
  • 1 cup shredded cheddar cheese
  • salt
