Healthy Blackberry Cobbler

I think we can all agree that the ultimate summer dessert is a fresh, juicy, and bubbly fruit filled dish. I’m talking crisps, crumbles, and cobblers galore! Ugh, my favorite! I absolutely loved my Blueberry Peach Crisp from last year so I simply had to make another recipe like it. This summer season’s recipe is a delicious Healthy Blackberry Cobbler.

I decided on this recipe for multiple reasons. One, blackberry cobbler is my dad’s favorite dessert so I have always wanted to make my own version. And two, I just love blackberries! In my opinion, they are a highly underrated fruit and deserved some love on my blog. Plus I did what I do best and made this cobbler into a better-for-you version! It is completely gluten free, vegan, and refined sugar free … but you will never be able to tell!

Cobbler, Crisp, & Crumble … What’s the difference?

Cobblers, Crisps, and Crumbles! What is the difference? Well that is actually a question that I had to look into myself and the answer is pretty simple.

They are all very similar … sweet and juicy fruit desserts topped with a pastry of sort. The most common fruit in these dishes is berries, but peaches and apples are delicious options too! For crisps and crumbles the pastry is a streusel-like, and most often crunchy, topping. Cobblers on the other hand, traditionally have a biscuit-like topping. But they can also be made with cake batter or cookie dough like topping … which is what is used in this recipe!

Despite the differences, I do know one thing … all three desserts are absolutely delicious!

Ingredients needed for Healthy Blackberry Cobbler…

This Healthy Blackberry Cobbler calls for all healthy, wholesome ingredients. They make for a much better for you, yet still delicious, version of the traditional blackberry cobbler! This simple cobbler is also completely gluten free, vegan, and refined sugar free.

Blackberry Mixture

  • Blackberries: You of course need lots of blackberries for this blackberry cobbler! Fresh or frozen will work and you will need 4 1/2 cups.
  • Coconut Sugar: A touch of coconut sugar adds just the right sweetness to the already deliciously sweet fruit. 2 tbsp is the perfect amount!
  • Lemon Juice: Lemon juice adds a tiny bit of tartness to balance out the sweet in this recipe. Add 1 tsp!
  • Cornstarch: 2 tsp of cornstarch helps to thicken up the fruit juices in this healthy cobbler. It creates a velvety smooth sauce!

Cobbler Topping

  • Almond Flour: The use of almond flour in this cobbler makes it completely gluten free! You will need 1 1/2 cups.
  • Coconut Sugar: Coconut sugar is also used in the cobbler topping of this recipe! It is refined sugar free and one of my favorite sweeteners. Add 1/4 cup!
  • Coconut Oil: Add 1/4 cup of melted refined coconut oil for the source of fat in this topping! Make sure to use refined coconut oil, as unrefined or virgin tastes like coconuts.
  • Almond Milk: A splash of almond milk adds the perfect amount of extra moisture here. This recipe calls for 2 tbsp!
  • Vanilla Extract: Add 1 tsp of vanilla extract to give this cobbler topping the perfect vanilla taste!
  • Baking Powder: Baking powder is used for a little rise … 1/4 tsp to be exact.
  • Salt: And lastly a pinch of salt to bring out all the flavors of this delicious blackberry cobbler!

How to make Healthy Blackberry Crumble from scratch…

This healthy blackberry crumble is quite simple to make! You just make your blackberry mixture, top with the cobbler dough, and bake until deliciously bubbly and juicy. So good!

  1. Set the oven to 350 degrees.
  2. In a mixing bowl combine the blackberries, coconut sugar, cornstarch, and lemon juice.
  3. In a separate bowl combine the almond flour, coconut sugar, baking powder, and salt evenly.
  4. Next add in the melted coconut oil, almond milk, and vanilla extract.  Combine until a cookie like dough forms.
  5. Add the blackberry mixture to a greased baking dish.
  6. Then spread the cobbler topping on top of the blackberries.  Sprinkle with some extra coconut sugar.
  7. Bake for 35 minutes or until the blackberries are bubbling.
  8. Enjoy!

Now you can obviously enjoy this simple dessert as is, but I highly recommend adding the classic vanilla ice cream scoop on top. Vegan if you need! There is just nothing like the sweet ice cream paired with the fruity and slightly tart berries. It’s pure dessert perfection!

This healthy blackberry cobbler is best served fresh out of the oven. The berries are juicy and bubbly and the cobbler topping is warm and delicious! I also highly recommend adding a scoop of vanilla ice cream on top.

How to best store this healthy blackberry cobbler?

I recommend storing this berry cobbler in the refrigerator in an air tight container. It should last for about a week! Then you can just re-heat a serving when you would like to enjoy the berry deliciousness.

Can I swap in another fruit for the blackberries?

Yes, you can definitely swap another fruit in for the blackberries in this recipe. You could use any other berries … like blueberries, strawberries, or raspberries! I think peaches would work perfectly as well.

Both fresh or frozen fruit will also work for this healthy cobbler!
