Well say goodbye to that! Cream Cheese & Veggie Egg Bites will be your new favorite choice. They are a cheaper option and even more convenient and delicious than the coffee shop go-to.

Cream Cheese & Veggie Egg Bites are the best make ahead breakfast! Oven baked in a muffin tin this veggie packed recipe is deliciously fluffy and absolutely loaded with flavor. Not to mention perfectly poppable! This quick & easy savory breakfast is great as meal prep and to grab on your way out the door.

Ingredients needed for Veggie Egg Bites…

Veggie Egg Bites only call for a few simple & healthy ingredients. About 10 to be exact! This recipe is also super customizable – simply add or swap in your favorite veggies!

  • Eggs: You gotta have eggs for egg bites! 8 to be exact.
  • Veggies: This Veggie Egg Bites recipe calls for 1 red bell pepper, 1 yellow bell pepper, 1 cup chopped carrots, 1 small onion, and 3 minced garlic cloves. But feel free to throw in your favorite veggies!
  • Cream Cheese: Cream cheese is honestly one of my favorite foods & I absolutely love it in this easy breakfast recipe. You’ll need 6 oz!
  • Milk: Mix in 1/4 cup of milk to the egg & cream cheese mixture. This makes your eggs so dang fluffy!
  • Olive Oil: 2 tbsp of olive oil is needed to sauté up the veggies in these egg bites!
  • Salt & Pepper: Add salt & pepper to taste of course.
  • Fresh Chives: Fresh chives are optional, but they add a delicious taste and a great look to this recipe!

Kitchen tools needed for this recipe…

The main important kitchen tool needed for this recipe is a mini muffin tin. You can totally use a regular sized muffin tin, but I think the mini bites are just so cute & poppable!

The other tools you’ll need are:

  • Whisk
  • Mixing Bowl
  • Cutting Board
  • Knife

How to make Cream Cheese Egg Bites…

This easy breakfast recipe is just that … easy! The hardest part about it is chopping the vegetables … which can totally be done ahead of time. Then you just whisk your eggs, add to the muffin tin with the chopped veggies, and bake in the oven for a short 15 minutes!

  1. Set the oven to 400 degrees.
  2. Then start by chopping the onion, peppers, & carrots and mincing the garlic cloves.
  3. Add the olive oil, garlic, onion, carrots, and peppers to a pan on the stove over medium heat.  Sauté until soft.  Add salt and pepper to taste.
  4. Next whisk the eggs, milk, and cream cheese together.  The cream cheese won’t mix in completely, but that’s okay.  Add more salt and pepper.
  5. Grab a mini muffin tin and grease or line.  Add about a table spoon sized scoop of the vegetables to each muffin and pour the egg mixture on top.  Add fresh chives on top.
  6. Bake for 13-15 minutes and until slightly golden brown
  7. Enjoy!

Can I add in other veggies to these Baked Egg Bites?

Yes, of course! Feel free to add in any vegetable you love to these egg bites and leave out any that you don’t.

Fun fact, these Cream Cheese & Veggie Egg Bites were inspired by vegetable cream cheese. Vegetable cream cheese is cream cheese mixed with garden vegetables like peppers, carrots, cucumbers, and even chives! I didn’t add the cucumbers because that wouldn’t be great when cooked, but I kept the rest. And they ended up delicious!

Can I use a different cheese for these Easy Egg Bites?

Yes! However, I recommend you still use a soft & spreadable cheese like ricotta or cottage.

  • Add a protein option! Bacon or turkey bacon would be absolutely delicious. Because let’s be honest everything is better with bacon.
  • Spice things up! I like how these are seasoned super simple with just salt and pepper, but add your favorite spices or seasonings to up the flavor here.
  • Use a different shape! If you’re not feeling these little egg bites, bake this recipe in regular sized muffins or in a dish like a casserole. Both would be great!

How do I store & re-heat this easy breakfast recipe?

Store Cream Cheese & Veggie Egg Bites in an airtight container in the refrigerator. They will last for about 1 week!

To re-heat on a busy morning just pop in the microwave for 30-40 seconds. So dang easy!

What should I eat with Veggie Egg Bites?

You can totally enjoy these egg bites on their own with a little hot sauce or ketchup! Except I do know that ketchup with eggs is controversial … but I personally love it.

I also like to add these egg bites into a more well rounded breakfast with some toast and fruit.
