You may or may not know this, but baked oatmeal is sort of my specialty! I love to make both single serve versions and larger batches, like Chocolate Chip Baked Oatmeal. The flavor options are truly endless, but this simple vanilla baked oatmeal studded with chocolate chips is one of my favorites yet! It’s so dang delicious … like dessert in the form of a healthy recipe.

Chocolate Chip Baked Oatmeal is made with old fashioned oats, vanilla protein powder, & lots of chocolate chips. It’s freezer friendly, will keep you satisfied all morning, and works great as meal prep. Top this easy oatmeal recipe with peanut butter & banana for a healthy breakfast that truly tastes like dessert!

Ingredients needed for Chocolate Chip Baked Oats…

All you need for this recipe is about 10 simple, healthy, & wholesome ingredients!

  • Oats: The base of this breakfast recipe is old fashioned oats! You will need 2 cups.
  • Vanilla Protein Powder: Chocolate Chip Baked Oatmeal is also made with vanilla protein powder. It adds a delicious flavor, sweetness, and of course a protein boost! Add 1/4 cup, I recommend this Garden of Life Vegan Vanilla Protein Powder.
  • Almond Milk: You will need 2 cups of almond milk too! I always use unsweetened vanilla almond milk, but you can really use any milk you have on hand and enjoy.
  • Applesauce: Applesauce adds some extra moisture and natural sweetness here. Add 1/4 cup.
  • Pure Maple Syrup: The main source of sweetness in these baked oats is pure maple syrup. It is a refined sugar free sweetener with a rich & delicious taste. Use 3 tbsp!
  • Chocolate Chips: Can’t have chocolate chip baked oatmeal without chocolate chips! I always use these dairy free semi sweet chips, but feel free to use whatever you like. You’ll need 1/4 cup plus a little extra!
  • Vanilla Extract: 2 tsp of vanilla extract adds some absolutely delicious flavor here.
  • Baking Powder: To bake to perfection, add 2 tsp of baking powder to this recipe.
  • Salt: Lastly, use a pinch of salt to balance out the sweet. 1/4 tsp to be exact!

How to make Chocolate Chip Baked Oatmeal..

Bake oatmeal is just about the easiest breakfast recipe there is! Mix, bake, & enjoy.

  1. Set the oven to 400 degrees.
  2. In a large mixing bowl combine the applesauce, pure maple syrup, almond milk, & vanilla extract.
  3. Next add in the dry ingredients – old fashioned oats, protein powder, baking powder, & salt.  Combine evenly.
  4. Then stir in the chocolate chips.
  5. Transfer the oatmeal mixture to a large greased baking dish.  Spread evenly & top with more chocolate chips.
  6. Bake for 35 minutes.
  7. Let cool, cut into squares, & enjoy!

Can I meal prep this recipe?

Yes, you can 100% meal prep this recipe! Prepare it over the weekend or at the beginning of the week, then store in the refrigerator and you’ll have a healthy breakfast ready to go for the next few days. Just pop a slice in the microwave or enjoy cold each morning.

How to best enjoy Protein Baked Oatmeal…

I recommend topping this oatmeal with the nut butter of your choice (I recommend peanut butter!), banana slices or a different fruit, and a drizzle of honey! You can also do this warm or cold.

Tip! When re-heating I love to add a splash of almond milk to the oats, as they tend to dry out a bit in the fridge.

Which protein powder should I use for this Baked Oatmeal Recipe?

I always always always use Garden of Life Vanilla Plant Protein Powder. It is my all time favorite, has a great taste, and bakes very well! But feel free to use your own favorite vanilla protein powder or whatever you have on hand.

You could even switch things up and use a different flavored protein powder if you’d like!

Storing Chocolate Chip Oatmeal…

Store Chocolate Chip Baked Oatmeal in an airtight container in the refrigerator. It will stay fresh for about 1 week!

You could also freeze this recipe! In the freezer it will keep for 1-2 months.
