Chicken Couscous Soup is great for those cold winter days or when you’re feeling sick! Made with Israeli or pearl couscous, vegetables, shredded chicken, and fresh dill … this simple soup is healthy, hearty, and delicious. It’s the perfect cozy recipe!


Ingredients

  • 2 large carrots, chopped
  • 1 cup celery, chopped
  • 1 onion, diced
  • 35 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 64 oz chicken broth
  • 2 chicken breasts, boneless & skinless
  • 1 1/2 cups Israeli couscous, dry
  • fresh dill
  • salt & pepper

Instructions

  1. Start by preparing the vegetables. Slice the carrots, chop the celery, dice the onion, and mince the garlic.
  2. Add the carrots, celery, onion, and garlic to a large pot or dutch oven with the olive oil, garlic powder, salt, and pepper. Sauté for about 10 minutes over medium heat.
  3. Next add in the chicken broth and bring to a boil.
  4. Once boiling, add the chicken breasts and dry couscous to the soup.
  5. After about 10 minutes remove the chicken, shred, and then mix back into the soup.  You can shred the chicken easily with two forks!
  6. Add 1/2 cup of water to the soup if more liquid is needed.  Add fresh dill and more salt & pepper to taste.  Lower the heat and let simmer for a few more minutes.
  7. Enjoy!
